People of THE MOUNTAIN: First impressions from the face of the hill...

I have eaten the classic French-Dip sandwich all over this great nation.  Today, I found the one that GOD likes to eat.  I can't say as I can blame him...

If you're headed for Canton this weekend, hurry, before Chef Todd gets called to his maker promoted to full-time status as the Holy Sous Chef, the guy who doesn't shave cheap beef so thin you wouldn't know it's tough.  No, Ole Todd uses Prime Rib, caramelized onion, cheese and fuses it within the confines of a toasty bun.  To top that, (Hang on, God's drooling overhead it's drizzling a little and I need to move my lawn chair back under the porch) Todd doesn't open a can of beef broth and call it 'Au Jus'.  No, sir, this concoction is akin to Stuff Served on Mount Olympus the finest of renderings, so complimentary of the beef within it left me speechless, chewing, savoring while making noises that ultimately ended up embarrassing The Fabulous Feathermaye.

Pappy and Flo are the owners of The Savannah.  This is the landmark we were guided to by Mrs. Z: "Turn in by the winery.  It's behind that."  Of course we had to run down the hill and try the place out.  Then, we found out some very remarkable things about Pappy.  Feathermaye will be telling you about this world class sculptor, and the project he is working on.  I'll just say, he made an impression on us, and we had only spoken with Flo, his wife.





By now, I sure do hope you've read-up on Canton, Tx.  We're dying to turn you all onto the tastes, the atmosphere and the incredible variety of everything we've stumbled across on our latest travels.   We're piling up copy here, talking with these unique people who enjoy a rare sense of freedom and community.   Be sure to follow us both here on the Blog, as well as Facebook for the latest post on our Off to Look for America Tour series.  We'll have regular photo blogs, as well as video (I'm about to go Cowboy up in here) as we open up the secrets of THE MOUNTAIN, as well as the rest of what Canton rolls out for you for four days a month, just before the first Monday.
